Smoked Salmon Pasta
with Avocado and Watercress

- 400g Angel hair pasta
- 200g Smoked salmon, sliced
- 80g Watercress, leaves picked
- 4 Spring onion, trimmed and sliced
- 2 tbs Baby capers, drained
- 2 tbs Olive oil
- 1 Lemon, first zest and then juiced
- Salt and pepper to taste
- 1/2 cup Parmesan cheese, grated
- 1 Avocado, chopped
Instructions
- Cook pasta in a large saucepan of boiling salted water until al dente. Drain, reserving 1 cup of pasta water. Keep warm
- Add remaining ingredients, except avocado and toss gently to combine. (add pasta water to loosen the mixture, a little at a time.
- Top with parmesan cheese and avocado and serve immediately
