A dish that takes this humble cheese to new heights. With its velvety texture and versatility, ricotta becomes the star of the show in this simple yet impressive recipe. Baking transforms the ricotta into a luscious and slightly golden creation. It intensifies the flavours and creates a contrast between the soft interior and the slightly crisp exterior.

In this recipe we use lemon zest, honey, crushed pistachios, and the additional touch of olive oil, sea salt, and pepper. The combination of sweet, tangy, and savoury elements adds depth and complexity to the dish. 

INGREDIENTS FOR THIS RUSTIC BAKED RICOTTA

HOW TO MAKE THE BAKED RICOTTA

This baked ricotta is super easy to make. Just add the ricotta cheese and eggs in a bowl and mix until smooth and creamy. Add most of the grated Parmesan cheese, lemon zest, and season with salt and pepper to taste. Give it a good mix until everything is nicely combined. Pour the mixture into a lined loaf tin. Smooth and sprinkle the remaining grated Parmesan cheese on top. Bake for about 35 minutes until it turns golden brown and sets. Let it cool for a few minutes. Drizzle honey all over the top, sprinkle crushed pistachios on top, and give it a generous drizzle of good quality extra virgin olive oil. Sprinkle flaked sea salt and crushed black pepper over the top for added flavor.

Description

Each ingredient in this recipe contributes to the overall taste and texture of Rustic Baked Ricotta, resulting in a delicious and versatile dish that can be enjoyed as both a savory appetizer or a sweet dessert.

  1. 750g tubs of ricotta
  2. 2 eggs
  3. 100g grated Parmesan cheese
  4. Zest of 1 lemon
  5. 2 tablespoons of honey
  6. 3 tablespoons of crushed pistachios
  7. Good quality extra virgin olive oil
  8. Flaked sea salt
  9. Crushed black pepper
  10. Focaccia bread for serving - see notes for more options


Instructions

Preheat the oven to 200°C/180°C fan.

  1. In a large bowl, combine the ricotta and eggs. Mix well until smooth and creamy.

  2. Add most of the grated Parmesan cheese to the ricotta mixture, reserving a small amount for later. Season with salt and pepper to taste, and add the lemon zest. Mix until well incorporated.

  3. Line a 900g loaf tin with parchment paper, allowing the paper to hang over the sides for easy removal later.

  4. Spoon the ricotta mixture into the prepared tin, levelling the top with a spatula or the back of a spoon.

  5. Sprinkle the remaining grated Parmesan cheese over the top of the ricotta mixture.

  6. Bake for about 35 minutes, or until the loaf is set and golden brown on top.

  7. Remove the loaf from the oven and let it cool in the tin for a few minutes. Then, carefully lift it out using the parchment paper and transfer it to a wire rack to cool completely.

  8. Once cooled, transfer the ricotta loaf to a serving platter.

  9. Drizzle the top of the loaf with honey, ensuring it covers the surface evenly.

  10. Sprinkle the crushed pistachios over the honey-drizzled surface, allowing them to stick to the loaf.

  11. Drizzle the loaf with a generous amount of good quality extra virgin olive oil.

  12. Sprinkle flaked sea salt and crushed black pepper over the top

  13. Serve with bread on the side
