Ingredients for this Courgette Prawn Pasta
This is a favourite, super easy, no-fuss pasta recipe for busy weeknights when you need something on the table quickly.
- Pasta (spaghetti, linguine, or your favourite type)
- Garlic cloves
- Onion
- Courgette (zucchini)
- Pre-marinated Raw prawns (shrimp) – This is my secret: I use Aldi marinated raw prawn. They deliver on taste without extra effort.
- Red pepper flakes (optional, for a bit of heat)
- Lemon
- White wine (optional, can substitute with chicken or vegetable broth)
- Parmesan cheese
- Fresh parsley
For this zucchini prawn pasta, you can opt to grate, spiralise, or slice the zucchini into thin ribbons. In this instance, we have chosen to grate the zucchini.
How to make this Zucchini Prawn Pasta
- Cook the Pasta according to package instructions until al dente.
- While the pasta is cooking, heat the oil over medium-high heat and add the prawns in a single layer. Fry on each side until they turn pink and nicely caramelised. Remove
- Then, in the same skillet, add the garlic and onion and sauté. Add the courgettes and sauté until just tender.
- Bring it home with the wine, lemon zest and lemon juice. Let it simmer to allow the flavours to meld. Return the prawns to the skillet add the pasta and toss to coat.
- And finally, add seasoning, Parmesan cheese and parsley.

Ingredients
- 200g pasta (spaghetti, linguine, or your favourite type)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 small onion, finely chopped
- 1 medium courgette (zucchini), spiralized or cut into thin ribbons
- 200g raw prawns (shrimp), peeled and deveined
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
- Zest and juice of 1 lemon
- 1/4 cup white wine (optional, can substitute with chicken or vegetable broth)
- Salt and pepper, to taste
- 1/4 cup grated Parmesan cheese
- 1/2 Bunch of Fresh parsley, chopped
Instructions
Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining. Set aside.
Cook the Prawns:
- Heat a skillet over medium-high heat with a bit of oil. Add the prawns in a single layer, making sure not to overcrowd the pan. Cook for 2-3 minutes on each side until they turn pink and the surface is nicely caramelised. Avoid overcooking by removing them from the skillet as soon as they are opaque and caramelised. Season with little salt and pepper. Set aside.
Prepare and cook the Veg:
- Use the same skillet, adding oil if needed, and reduce the heat to medium. Add the minced garlic and chopped onion, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the grated courgettes and sauté for 2-3 minutes until just tender.
Combine and Finish the Dish:
- Add the white wine (or substitute) and reduce; this will take a minute or two.
- Then add the lemon zest and lemon juice. Stir to combine and let it simmer for 1-2 minutes to allow the flavours to meld and the alcohol to evaporate.
- Return the prawns to the skillet with the courgettes and just warm through.
- Add the cooked pasta to the skillet, tossing to coat in the sauce. If the mixture is too dry, add a bit of the reserved pasta water to achieve the desired consistency.
Serve:
- Taste and season with additional salt and pepper if needed. Sprinkle with grated Parmesan cheese and chopped parsley.
- Serve immediately and enjoy your delicious Courgette Prawn Pasta!

Courgette Prawn Pasta FAQ
If you don’t have Aldi marinated prawns, you can easily make your own by combining peeled and deveined prawns with minced garlic, chopped chili, olive oil, salt, and pepper. Allow the prawns to marinate in the refrigerator for at least 30 minutes before cooking.
Yes, you can use frozen prawns for this recipe. Make sure to thaw them completely before marinating and cooking.
