1 cup mayonnaise

2 tablespoons Greek yogurt

1 tablespoon lemon juice

1 tablespoon garam masala

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

1/4 teaspoon turmeric powder

1/4 teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

Fresh cilantro, finely chopped (for garnish)


Instructions

  1. Make the base mixture: In a medium bowl, combine the mayonnaise and Greek yogurt and mix until smooth.
  2. Add citrus: Stir in the lemon juice to give a fresh, tangy flavour that balances the spices.
  3. Add spices: Sprinkle in the garam masala, garlic powder, onion powder, smoked paprika, ground cumin, ground coriander, turmeric and cayenne pepper if using.
  4. Incorporate the spices: Mix thoroughly until all spices are fully blended into the creamy base.
  5. Season to taste: Taste the tandoori mayo, then season with salt and pepper, adjusting spices if you prefer a stronger flavour.
  6. Chill the mayo: Cover and refrigerate for at least 30 minutes to allow the flavours to meld together.
  7. Finish and serve: Before serving, garnish with freshly chopped cilantro for a burst of freshness.
