Ingredients
- 400g Spaghetti
- 160g Lean prosciutto, thinly sliced
- 2tbs Olive oil
- 1 Red onion, finely chopped
- 300g Mushrooms, trimmed and sliced
- 4 Cloves of garlic, peeled and crushed
- 1/2 cup Parsley, roughly chopped
- 100g Parmesan cheese, grated
- Salt and pepper, to taste
Instructions
- Cook pasta according to package instructions. Drain, reserving some of the water.
- Meanwhile, heat frying pan and cook prosciutto until crispy. Remove and set aside.
- Add half the oil to the frying pan and cook the onion and garlic over a low heat for 6 minutes. Add remaining oil and mushrooms and continue cooking for another 5 minutes before adding 1/2 cup of pasta water.
- Add mushroom mixture and parsley to the drained pasta and stir to combine. Add more pasta water if required.
- Stir through prosciutto and parmesan cheese. Drizzle with extra virgin olive oil and serve immediately.
