Smoked Salmon and Avocado Pasta

Ingredients

Units Scale
  1. 400g Angel hair pasta
  2. 200g Smoked salmon, sliced
  3. 80g Watercress, leaves picked
  4. 4 Spring onion, trimmed and sliced
  5. 2 tbs Baby capers, drained
  6. 2 tbs Olive oil
  7. 1 Lemon, first zest and then juiced
  8. Salt and pepper to taste
  9. 1/2 cup Parmesan cheese, grated
  10. 1 Avocado, chopped


Instructions

  1. Cook pasta in a large saucepan of boiling salted water until al dente. Drain, reserving 1 cup of pasta water. Keep warm
  2. Add remaining ingredients, except avocado and toss gently to combine. (add pasta water to loosen the mixture, a little at a time.
  3. Top with more parmesan cheese and avocado and serve immediately
