Ingredients
- 750g tubs of ricotta
- 2 eggs
- 100g grated Parmesan cheese
- Zest of 1 lemon
- 2 tablespoons of honey
- 3 tablespoons of crushed pistachios
- Good quality extra virgin olive oil
- Flaked sea salt
- Crushed black pepper
- Focaccia bread for serving – see notes for more options
Instructions
Preheat the oven to 200°C/180°C fan.

In a large bowl, combine the ricotta and eggs. Mix well until smooth and creamy.

Add most of the grated Parmesan cheese to the ricotta mixture, reserving a small amount for later. Season with salt and pepper to taste, and add the lemon zest. Mix until well incorporated.

Line a 900g loaf tin with parchment paper, allowing the paper to hang over the sides for easy removal later.

Spoon the ricotta mixture into the prepared tin, levelling the top with a spatula or the back of a spoon.

Sprinkle the remaining grated Parmesan cheese over the top of the ricotta mixture.

Bake for about 35 minutes, or until the loaf is set and golden brown on top.

Remove the loaf from the oven and let it cool in the tin for a few minutes. Then, carefully lift it out using the parchment paper and transfer it to a wire rack to cool completely.

Once cooled, transfer the ricotta loaf to a serving platter.

Drizzle the top of the loaf with honey, ensuring it covers the surface evenly.

Sprinkle the crushed pistachios over the honey-drizzled surface, allowing them to stick to the loaf.

Drizzle the loaf with a generous amount of good quality extra virgin olive oil.

Sprinkle flaked sea salt and crushed black pepper over the top

Serve with bread on the side
