Crispy Prosciutto Pasta

Description

Experience pure umami bliss with this delectable pasta dish featuring tender mushrooms, crispy prosciutto, and a generous sprinkle of Parmesan cheese. With its speedy preparation and wide-ranging appeal, it’s the ultimate recipe to please the whole family during busy weeknights.


Ingredients

  1. 400g Spaghetti
  2. 160g Lean prosciutto, thinly sliced
  3. 2tbs Olive oil
  4. 1 Red onion, finely chopped
  5. 300g Mushrooms, trimmed and sliced
  6. 4 Cloves of garlic, peeled and crushed
  7. 1/2 cup Parsley, roughly chopped
  8. 100g Parmesan cheese, grated
  9. Salt and pepper, to taste


Instructions

  1. Cook pasta according to package instructions. Drain, reserving some of the water.
  2. Meanwhile, heat frying pan and cook prosciutto until crispy. Remove and set aside.
  3. Add half the oil to the frying pan and cook the onion and garlic over a low heat for 6 minutes. Add remaining oil and mushrooms and continue cooking for another 5 minutes before adding 1/2 cup of pasta water.
  4. Add mushroom mixture and parsley to the drained pasta and stir to combine. Add more pasta water if required.
  5. Stir through prosciutto and parmesan cheese. Drizzle with extra virgin olive oil and serve immediately.
