Description

Enjoy the tangy and creamy goodness of this homemade Dijon dressing! It adds a burst of flavour to any salad or dish. Its extremely versatile and easy to make. Store any leftovers in the refrigerator for up to one week. Bon appétit!

Ingredients

Units Scale
  1. 1 tbs Dijon mustard
  2. 2 tbs Maple Syrup or Honey
  3. 2 tbs Apple cider vinegar
  4. 1/4 cup Extra virgin olive oil
  5. 1 clove Garlic, blanched and minced
  6. 1/2 tsp salt
  7. 1/4 tsp black pepper

Instructions

  1. Blanch the Garlic by submerging the peeled garlic clove in boiling hot water and let it steep in the hot water for 5-10 minutes. (see note 1)
  2. In a small bowl, whisk together the Dijon mustard and maple syrup or honey until well combined.
  3. Add the apple cider vinegar and whisk until the mixture is smooth.
  4. Slowly drizzle in the extra virgin olive oil while whisking continuously to emulsify the dressing.
  5. Remove the garlic from the hot water and mince.
  6. Add the minced garlic, salt, and black pepper, and whisk until all the ingredients are incorporated.
  7. Taste and adjust the seasoning, adding more salt or pepper if desired.
  8. Transfer the dressing to a jar or container with a tight-fitting lid.
  9. Refrigerate for at least 30 minutes to allow the flavours to meld together.
  10. Give the dressing a good shake before using it to dress your favourite salads or use it as a flavourful marinade for grilled vegetables or chicken.

Notes

  1. This method of blanching garlic helps reduce the intensity of its raw flavour, making it more subtle and palatable in dishes. It is particularly useful when using raw garlic in recipes where you prefer a milder garlic flavour.
