- 3 tablespoons honey
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt
- 1/4 teaspoon cinnamon (optional, for a hint of warmth)
- 1 tablespoon granulated sugar (optional, for added crunch)
Instructions
- Preheat the oven: Preheat the oven to 160°C (fan-forced) / 325°F and line a baking tray with baking paper.
- Warm the honey mixture: Add the honey, butter and salt to a small saucepan and gently heat until melted and smooth. Add the cinnamon if using.
- Coat the macadamias: Place the macadamia nuts in a bowl, pour over the honey mixture and stir until evenly coated.
- Spread on tray: Transfer the coated nuts to the prepared tray and spread them out in a single layer.
- Roast the nuts: Bake for 10 minutes, stir well, then return to the oven for another 5–10 minutes until golden.
- Cool and crisp: Remove from the oven and allow to cool completely on the tray, stirring once or twice as they cool.
- Add crunch (optional): Sprinkle with sugar while hot for crunch, or sea salt as they cool for a salty finish.
- Finish and serve: Break apart any clusters and serve, or store in an airtight container once fully cooled.
