For the Udon Noodles:
- 500g udon noodles
For the Beef Mince:
- 600g beef mince
- 1 tablespoons of vegetable oil
- 4 cloves garlic, minced
- 1 tablespoon minced ginger
- 4 tablespoons soy sauce
- 2 tablespoons oyster sauce (optional)
- 2 teaspoons sesame oil
- 1 tablespoon sugar
- Salt and pepper, to taste
- 300g fresh spinach
- 2 tablespoons chilli crisp (plus more for serving)
For Topping:
- Sliced green onions
- Fresh coriander
- Sesame seeds
- Crushed cashew nuts (optional)
Instructions
- Cook the udon: Bring a pot of water to the boil, cook the udon noodles according to packet instructions until tender, then drain and rinse under cold water and set aside.
- Start the beef: Heat the vegetable oil in a large skillet or wok over medium-high heat, add the garlic and ginger and cook for about 30 seconds until fragrant.
- Brown the mince: Add the beef mince and cook, breaking it up with a spatula, until browned and cooked through, about 5–7 minutes.
- Season the beef: Stir in the soy sauce, oyster sauce (if using), sesame oil, sugar, salt and pepper and cook for another 2–3 minutes.
- Add spinach and chilli crisp: Add the spinach and chilli crisp to the pan and cook until the spinach has just wilted, about 2–3 minutes.
- Combine with noodles: Add the cooked udon noodles to the pan and toss everything together until well combined and heated through, 1–2 minutes.
- Serve: Divide between bowls and finish with extra chilli crisp, sliced spring onions and sesame seeds.
