Description

 Whether you're craving a cosy weeknight dinner or something impressive to wow your friends, this recipe hits the spot. Bonus: It's so easy to customize with your favourite toppings!

For the Udon Noodles:

  1. 500g udon noodles

For the Beef Mince:

  1. 600g beef mince
  2. 1 tablespoons of vegetable oil
  3. 4 cloves garlic, minced
  4. 1 tablespoon minced ginger
  5. 4 tablespoons soy sauce
  6. 2 tablespoons oyster sauce (optional)
  7. 2 teaspoons sesame oil
  8. 1 tablespoon sugar
  9. Salt and pepper, to taste
  10. 300g fresh spinach
  11. 2 tablespoons chilli crisp (plus more for serving)

For Topping:

  1. Sliced green onions
  2. Fresh coriander
  3. Sesame seeds
  4. Crushed cashew nuts (optional)

Instructions

  1. Cook the udon: Bring a pot of water to the boil, cook the udon noodles according to packet instructions until tender, then drain and rinse under cold water and set aside.
  2. Start the beef: Heat the vegetable oil in a large skillet or wok over medium-high heat, add the garlic and ginger and cook for about 30 seconds until fragrant.
  3. Brown the mince: Add the beef mince and cook, breaking it up with a spatula, until browned and cooked through, about 5–7 minutes.
  4. Season the beef: Stir in the soy sauce, oyster sauce (if using), sesame oil, sugar, salt and pepper and cook for another 2–3 minutes.
  5. Add spinach and chilli crisp: Add the spinach and chilli crisp to the pan and cook until the spinach has just wilted, about 2–3 minutes.
  6. Combine with noodles: Add the cooked udon noodles to the pan and toss everything together until well combined and heated through, 1–2 minutes.
  7. Serve: Divide between bowls and finish with extra chilli crisp, sliced spring onions and sesame seeds.
