Description

 Whether you’re craving a cosy weeknight dinner or something impressive to wow your friends, this recipe hits the spot. Bonus: It’s so easy to customize with your favourite toppings!


Ingredients

For the Udon Noodles:

  1. 600g udon noodles

For the Beef Mince:

  1. 500g beef mince
  2. 2 tablespoons of vegetable oil
  3. 4 cloves garlic, minced
  4. 1 tablespoon minced ginger
  5. 4 tablespoons soy sauce
  6. 2 tablespoons oyster sauce (optional)
  7. 2 teaspoons sesame oil
  8. 1 tablespoon sugar
  9. Salt and pepper, to taste
  10. 300g fresh spinach
  11. 2 tablespoons chilli crisp (plus more for serving)

For Topping:

  1. Sliced green onions
  2. Fresh coriander
  3. Sesame seeds
  4. Crushed cashew nuts (optional)


Instructions

Cook the Udon Noodles

  • Bring a pot of water to a boil. Add the udon noodles and cook according to package instructions (usually about 3-4 minutes).
  • Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Beef Mince

  • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  • Add the minced garlic and ginger, stirring until fragrant (about 30 seconds).
  • Add the beef mince, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  • Stir in the soy sauce, oyster sauce (if using), sesame oil, sugar, salt, and pepper. Cook for another 2-3 minutes.
  • Add the fresh spinach and 1 tablespoon of chilli crisp directly to the beef mixture. Cook until the spinach wilts down, about 2-3 minutes.

Combine

  • Add the cooked udon noodles to the beef and spinach mixture. Toss well to combine and heat through for 1-2 minutes.

Serve

  • Divide the noodle mixture into bowls. Top each serving with an additional drizzle of chilli crisp and garnish with sliced green onions and sesame seeds.
