Easy Rotisserie Chicken Salad with Potato and Avocado

Ingredients
- 8 Baby potatoes, halved
- 1/3 cup Olive oil
- 1 Long red chilli, halved and finely chopped
- 1 Lemon, zest and juiced
- 2 tsp Cumin
- 2 tbs Oregano, leaves finely chopped
- 600g Rotisserie chicken, remove bones and skin and slice or shred
- 1/2 cup Extra virgin olive oil
- 1/4 cup Cider vinegar
- 2 tsp Dijon mustard
- 2 Cloves garlic, peeled and crushed
- Salt and pepper to taste
- 2 Baby cos lettuce, leaves separated and roughly torn
- 1 Red onion, thinly sliced
- 200g Snow peas, trimmed to remove string and cut in half
- 1 Avocado, cut into cubes
Instructions
- Steam potatoes in a steamer over boiling water for 15 minutes until tender. Set aside.
- Combine half of the olive oil, chilli, lemon zest and juice, cumin and oregano in a bowl then add cooked chicken and turn to coat.
- Place extra virgin olive oil, cider vinegar, Dijon mustard, garlic, salt and pepper in a jar and shake well. Set aside
- Place potatoes, onion, lettuce, snow peas and avocado into a bowl. Toss with dressing, divide among serving plates and top with slices of chicken breast.
