Ingredients

  1. 1 tbs Olive oil
  2. 6 Rashers of streaky bacon
  3. 1 Brown onion, thinly sliced
  4. 200ml Dry white win
  5. 800g Crushed tomatoes
  6. 4 Bay leaves
  7. 400g Fettuccine
  8. 2 Tomatoes, chopped
  9. 700g Seafood mixed
  10. 1/2 cup Parsley, chopped
  11. 1/3 cup Basil, leaves picked and roughly torn
  12. Salt and pepper to taste
  13. 2 Lemon, cut into wedges to serve


Instructions

  1. Heat oil in a large saucepan to medium high heat and cook bacon until crispy. Remove and chop in bite sizes and set aside.
  2. Reduce heat to medium, add onion and garlic and cook for 5 minutes, until soft. Add wine and bring to a boil before adding the crushed tomatoes and bay leaves. Simmer for 15 minutes until sauce thickens.
  3. Cook fettucine according to packet instructions. Drain and keep warm.
  4. Add fresh tomato and the seafood mix to the tomato sauce and cook for 10 minutes or until seafood are cooked.
  5. Add bacon bits, parsley and basil to the sauce. Spoon the pasta into bowls, top with the sauce, squeeze of lemon juice and season.
