Description

This bagel with hummus and leftover antipasti is a delicious and healthy choice that combines creamy hummus with fresh, crunchy antipasti, making it a convenient lunch option for the day after your antipasti dinner.


Ingredients

  1. 2 bagels, toasted
  2. 1/2 cup hummus (store-bought or homemade)
  3. 1 handful of baby spinach leaves
  4. 50g Spanish Serrano Ham or any other deli meat
  5. 1 small fire roasted red bell pepper, sliced
  6. 2 tablespoons marinated feta cheese
  7. 2 tablespoons mixed olives and stuffed peppadews


Instructions

Prepare the Bagels:

Slice the bagels in half and toast them to your desired level of crispiness.

Spread the Hummus:

Generously spread hummus on each half of the toasted bagels, or as much as you like.

Layer the leftover antipasti:

Start layering the ingredients on the hummus-covered bagels. Begin with the baby spinach leaves, then add the meat slices, fire roasted red bell pepper slices.

Add Feta, mixed olives and peppadews:
